This recipe is a fabulous combination of elegant, yet earthy.  Pair with a bottle of good red wine.

Ingredients

  • Marinade:
  • 2 1/2 cups sour cream
  • 1 1/2 c. chopped chives
  • 2 1/2 cups mayonnaise
  • 1/2 c. red wine
  • 1 c. buttermilk
  • 1/2 lb. Roquefort cheese, crumbled
  • 2 tbsp. Worcestershire sauce
  • 2 tsp. pepper
  • 2 tbsp. fresh lemon juice
  • 2 tsp. white vinegar
  • 1 tsp. celery seed
  • 1 tsp. garlic salt
  • 1 c. minced onion
  • A few drops of Tabasco
  • 10 8oz. beef fillet steaks
  • Mushroom Sauce:
  • 1 lb. mushrooms
  • 1/2 c. green onions, chopped
  • 3 cloves garlic
  • 1/4 c. minced parsley
  • 1/2 c. butter

Instructions

  1. Combine all marinade ingredients. Take out 1/3 of the marinade and reserve it for topping steaks. Place the rest of the steaks in the remaining marinade. Cover and let sit overnight.
  2. Remove steaks from marinade. Grill steaks.
  3. Sauce the mushrooms, green onions, garlic, and parsley in butter. Drizzle over cooked steaks.
  4. Serve with the remaining steak marinade that was set aside.
