This recipe is a fabulous combination of elegant, yet earthy. Pair with a bottle of good red wine.

Fireside Fillets in Mushroom Sauce
Ingredients
- Marinade:
- 2 1/2 cups sour cream
- 1 1/2 c. chopped chives
- 2 1/2 cups mayonnaise
- 1/2 c. red wine
- 1 c. buttermilk
- 1/2 lb. Roquefort cheese, crumbled
- 2 tbsp. Worcestershire sauce
- 2 tsp. pepper
- 2 tbsp. fresh lemon juice
- 2 tsp. white vinegar
- 1 tsp. celery seed
- 1 tsp. garlic salt
- 1 c. minced onion
- A few drops of Tabasco
- 10 8oz. beef fillet steaks
- Mushroom Sauce:
- 1 lb. mushrooms
- 1/2 c. green onions, chopped
- 3 cloves garlic
- 1/4 c. minced parsley
- 1/2 c. butter
Instructions
- Combine all marinade ingredients. Take out 1/3 of the marinade and reserve it for topping steaks. Place the rest of the steaks in the remaining marinade. Cover and let sit overnight.
- Remove steaks from marinade. Grill steaks.
- Sauce the mushrooms, green onions, garlic, and parsley in butter. Drizzle over cooked steaks.
- Serve with the remaining steak marinade that was set aside.
