One of my best childhood friends, Ariana, was moving to Montana. I wanted to throw her a going away party at my home in the late fall. It was cold outside and all we wanted was to snuggle in by the fire and stay warm while we showered her with special gifts to say goodbye.
I decided to make a soup from all of the ingredients I love and it turned out to be a winner. I need to work on my exact amounts because I tend to be a very “creative” cook – putting in a little of this and a little of that. But honestly, with these ingredients, you can’t go wrong.
I had so many from the party reaching out to see if they could get my recipe for this soup afterwards. It’s a crowd pleaser!
You’ll be happy to know my friend is adjusting to life well in Montana, and hopefully she’s making this soup to stay warm.

PrintItalian Sausage White Bean Soup (Ariana’s Going Away Soup)
I made up this soup for my friend’s going away party – it’s a crowd pleaser! I’ve tested it on teens and adults alike.
Ingredients
2 lb. Italian Sausage
2 Onions, chopped
5 cloves Garlic, minced
3 cans Diced tomatoes
1 can Tomato paste
8 cups Chicken broth
1 cup Red wine
2 cans Cannellini beans
1 Tbsp. Oregano
1 Tbsp. Dried Basil
1 cup Cream (optional)
Instructions
Cook sausage on stove & break into small pieces.
Sauté the onions. When soft, add a generous amount of chopped garlic. Sauté.
Add the two cans diced tomatoes, tomato paste, 2 boxes broth, 1 cup red wine, 1 tbsp basil, 2tbsp oregano, 2 cans beans
Simmer for at least an hour.
Before serving add the 1-2 cups cream (optional).
