March madness is like Christmas at our house. My family loves everything about the college basketball frenzy.
We build a bracket wall and decorate. Kids even miss some school to watch games. And we are HUGE Gonzaga Bulldog fans as that is our hometown team (GO ZAGS!).
This year for Selection Sunday I did a baked potato board for our kick off party and it turned out so great.
Plus, it’s EASY!
Seriously easy.
Bake some potatoes, prepare toppings, put them on a board and you’ve got a crowd pleasing dinner that looks pretty too.
It presents well and tastes great (and is gluten free and can be dairy free also).

Try this baked potato board for your next game day or party! It meets all dietary needs, is a hearty meal, and looks pretty at the same time.
Ingredients
6–8 baked potatoes
1 lb. ground beef, cooked
15 pieces bacon, cooked and crumbled
1 jar salsa
1 head broccoli
1/2 lb. cheese, shredded
1 package fresh chives, chopped
1 tub sour cream
1 stick butter, sliced
1 bunch green onions
1 package micro greens
1 tub white queso
1 can chili (optional)
1 bag tortilla chips
Coarse salt
Olive oil
Instructions
Pierce potatoes with a fork after scrubbing. Using a silicone brush, rub olive oil all over the skin. Place on a baking sheet and sprinkle with coarse salt. Bake at 400 degrees until soft and easily pierced with a fork.
Prepare topping and place in bowls.
Using a large charcuturie board, arrange the potatoes and toppings on the board. Fill in gaps with tortilla chips and serve.
