Do you love Dutch Baby pancakes but don’t love the calories or sugar that fills them? Enter – the good for you version! It’s delicious and won’t leave you feeling deprived. The fresh lemon and Swerve powdered sugar on the top makes the recipe. This will fuel your body the entire day.
1/2 c. old fashioned oats
1/2 c. almond milk
2 egg whites
2 whole eggs
1 Tbsp. Truvia or Stevia (optional)
pinch of salt
pinch of nutmeg
1 tsp. coconut oil
Fresh lemon wedges
Swerve powdered sugar
Heat the oven to 400 degrees. Place the 1 tsp. coconut oil into a cast iron skillet and place in the top rack of the oven.
Put all ingredients in blender and mix well.
Using an oven mitt, remove the skillet from the oven once the oil has melted. Swirl around the pan to cover the entire surface.
Pour the blender mixture into the hot skillet.
Put back in the oven and bake for 20 min.
Remove from the oven and cut into triangles.
Top with fresh squeezed lemon juice and Swerve powdered sugar.
*If you want to make this Trim Healthy Mama approved, or lower fat, just omit the egg yolks in all of the eggs
