Cherry Almond Granola


There is something so homey…. so warm…. so comforting about homemade granola.  I’ve tried a dozen recipes, and finally landed on my own spin of this tried and true favorite.  Layer it with yogurt to make a breakfast parfait, take it hiking on your next adventure, or keep in the car for the kids to eat out of the bag before soccer practice.

Cherry Almond Granola


  • 1/2 c. vegetable oil
  • 1/2 c. honey
  • 1/4 c. brown sugar
  • 1 tsp. vanilla extract
  • 3 cups old fashioned rolled oats
  • 1 1/4 cups sliced or chopped almonds
  • 1 cup dried cherries
  • 1/2 cup dried apricots, chopped
  • 1 1/2 c. rice krispies cereal
  • 1 cup sweetened flaked coconut (optional)
  • 1/4 c. flax seed (optional)


  1. Preheat the oven to 300 degrees.  Line a rimmed baking sheet with parchment paper (or use silicone mats).  Stir together the oil, honey, brown sugar, and vanilla in a saucepan over low heat until blended and the sugar has dissolved.  Keep warm.  In large bowl, mix together the oats, cherries, almonds, krispies, and extras.  Add the warm sauce mixture to the dry ingredients and stir to combine well.  Spread the granola on the prepared pans and bake for 28-32 min., or until golden.  Stir the mixture every 10 minutes.  Cool completely then crumble.
